Baking in a Wooden Baking Box
This style of baking slowly disappeared over time but now, thanks to a few artisans there are now more being made in various pockets of the world. The reintroduction of baking in boxes has been primarily for Christmas cakes as they are a good heavy cake which appreciate the long slow bake, however most heavy cakes will provide the baker with terrific result. Please note that the cooking time is a longer than using metal. (see our recipe) The key reason for using our wooden cake box is that it is made out of New Zealand renewable timber and steel screws which will both last for years. Only one layer of baking paper is required and your fruit cakes will be a joy to bake! (low & slow ensures an evenly baked, moist cake). Christmas cakes are traditionally made in New Zealand around Labour Weekend or the end of October. Once made they can be kept, well sealed and bought out every week or two for a wee dram of whiskey to keep them moist and enhance the flavour.
