Al’s Laboratory is a small, family business based in Geraldine, South Canterbury.
We produce a range of fermented, Louisiana style hot sauces and hot honey sauces using local Kanuka honey.The journey began in 2014 as a long trip down the You Tube rabbit hole trying to discover how Tabasco was made. A fermenting jar of mashed peppers and aromatics became a permanent fixture on our kitchen bench. Several batches later (and some children and opening a café) Al’s Hot Pepper sauce and Hot Honey Sauce made their way to the counter at our café The Running Duck.
Hot sauce is a labour of love for me (that will be Al) and growing peppers is an obsession. To be able to produce and sell hand-crafted products that are the result of your passion is a great experience.The core range of 5 sauces will be enhanced in the future with batches of new seasonal sauces that use classic New Zealand flavours and our home-grown peppers.
